Ingredients:
4 trout fillets, boneless
2 tablespoons avocado oil
1 cup cilantro, chopped
2 tablespoons lemon juice
½ cup coconut cream
1 tablespoon walnuts, chopped
A pinch of salt and black pepper
3 teaspoons lemon zest, grated
Directions:
In a blender, combine the cilantro with the cream and the other ingredients except the fish and the oil and pulse well.
Heat up a pan with the oil over medium heat, add the fish and cook for 4 minutes on each side.
Add the cilantro sauce, toss gently and cook over medium heat for 7 minutes more.
Divide the mix between plates and serve.
