Ingredients:
2 tablespoons olive oil
1 pound cod fillets, boneless and cubed
2 spring onions, chopped
2 garlic cloves, minced
1 cup coconut cream
¼ cup chives, chopped
A pinch of salt and black pepper
2 tablespoons Dijon mustard
Directions:
Heat up a pan with the oil over medium heat, add the garlic and the onions and sauté for 5 minutes.
Add the fish and the other ingredients, toss, cook over medium heat for 15 minutes more, divide into bowls and serve.
